Hot cross buns with raisins
Hot cross buns are small enriched buns with raisins and spices, traditionally made in the United Kingdom for Good Friday. Their decorative cross recalls the crucifixion. Often enjoyed at Easter, they are also eaten throughout the year.

For the buns

  1. 1

    Dissolve the yeast

Warm the milk and water for the buns to lukewarm, without making them hot. Dissolve the yeast in them.

  2. 2

    Let the yeast foam

Rest for approximately 10 minutes, or the time specified on the yeast packaging, until the mixture starts to foam.

  3. 3

    Prepare and knead the dough

In the mixer bowl, combine the flour for the buns, brown sugar, salt, cinnamon, ginger and finely grated lemon zest. Add the beaten egg, butter cut into pieces and dissolved yeast. Knead for approximately 10 minutes, until the butter is incorporated and the dough is smooth. Add the raisins and mix to distribute them.

  4. 4

    Let the dough rise

Cover the mixer bowl and rest for approximately 1 hour in a warm, draught-free place. The dough should have increased noticeably in volume before you continue.

  5. 5

    Shape the buns

Press the dough to release the air, then divide it into equal portions for your chosen number of buns. Shape into balls and place them, spaced apart, on a baking tray lined with baking paper.

  6. 6

    Let the buns rise

Cover and rest for approximately 30 minutes, until the buns have risen. Towards the end of this rise, preheat the oven to 180 °C.

For the crosses

  1. 7

    Pipe the crosses

Mix the flour and icing sugar intended for the crosses. Gradually add the water, stirring to make a smooth paste thick enough to hold a line. Transfer to a piping bag and pipe a cross on each bun.

    Bake the buns

Bake at 180 °C for approximately 20 minutes, until the buns are golden.

For finishing and serving

  1. 9

Glaze the buns while still hot

Gently warm the orange jam to loosen it, or dilute the honey with the water intended for the glaze. Brush the buns as soon as they leave the oven, then place them on a cooling rack.
