Preparation
- In a small bowl, mix the yeast with the warm milk.
- Leave to stand for 5 to 10 minutes, until the yeast becomes frothy.
- In a large bowl, sift the flour and add the sugar, salt and baking soda. Mix well.
- Make a well in the center of the dry ingredients and pour in the yeast-milk mixture.
- Gradually mix in the lukewarm water until you obtain a smooth, thick batter. The consistency should be thicker than pancake batter.
- Cover the bowl with a clean cloth and leave the dough to rest in a warm place for about 1-2 hours, until doubled in volume.
- Preheat a non-stick frying pan or crumpet pan over medium-low heat. Lightly grease with a little oil or butter. Use crumpet cutters or kitchen rings to pour the batter into the pan.
- Spoon 1 to 2 tablespoons of batter into each cookie cutter.
- Cook the crumpets for about 5 to 8 minutes, until holes form on the surface and the bottom is golden brown.
- Gently turn them over and cook the other side for 1-2 minutes.
- Remove the crumpets from the pan and repeat the process until all the batter has been used.
- Serve the crumpets warm with butter, honey, jam or any other topping of your choice.
