Stack of buttermilk pancakes on a plate
I make these pancakes with buttermilk, a fermented milk that makes them fluffy. You can use shop-bought or homemade buttermilk. Mix the batter quickly, then cook the pancakes in small batches. Serve hot with your choice of topping: jam, chocolate spread or dulce de leche.

The pancakes

  1. 1

    Prepare the ingredients

In a large bowl, combine the flour, salt, bicarbonate of soda and sugar. In a second bowl, crack the eggs and beat lightly. Add the buttermilk, then the melted butter intended for the batter, once cooled.

  2. 2

    Mix the preparation

Pour the liquid mixture into the bowl of dry ingredients and mix quickly. A few lumps can remain; the batter does not need to be perfectly smooth.

  3. 3

    Cook the first side

Heat the pan, then lightly grease it with a brush using the butter intended for cooking. Pour in a small ladleful of batter for each pancake and cook until bubbles appear on the surface.

  4. 4

    Finish cooking and serve

When bubbles appear on the surface, turn the pancakes over and finish cooking the other side. Place on a plate. Repeat with the remaining batter, greasing the pan again as needed. Serve the pancakes hot with jam, chocolate spread or dulce de leche.
