Scones on a plate, with one split and topped with red jam
These jam scones can be enjoyed for breakfast or as a snack, especially as part of a festive St Patrick’s Day table. Rub the cold butter into the flour, then work the dough as little as possible to keep the scones soft. Cut out eight to ten scones and serve them warm with jam and, if you wish, cream or butter.

Scones

  1. 1

Prepare the oven and baking sheet

Preheat the oven to 220 °C and line a baking sheet with baking paper.

    220 °C
  2. 2

    Mix the dry ingredients

Mix the flour, sugar, salt and baking powder in a large bowl.

  3. 3

    Rub in the cold butter

Add the cold butter, cut into small pieces. Rub it into the flour with your fingertips until the mixture resembles breadcrumbs.

  4. 4

    Add the milk

Make a well in the centre, pour in the milk and mix gently, just enough for the dough to come together.

  5. 5

Shape and cut out the scones

Place the dough on a lightly floured work surface. Knead briefly until smooth, without overworking it. Roll it out to about 2 cm thick, then cut out rounds with a 5 to 6 cm cutter. Arrange them on the baking sheet, leaving a little space between them.

Egg wash

  1. 6

    Glaze the scones

Beat the egg, then brush the tops of the scones.
